Apple Crunch Slice at Pizza & Papercrafting

So at Pizza & Papercrafting each month I provide space, pizza dinner, hot drinks and supper. Supper normally involves a variety of baked and bought items – this month I was a bit time anaemic so made up a quick apple slice using a cake mix as the base, which went down very well – so I thought I’d share the recipe here.

Ingredients

  • 340 g buttercake cake mix
  • 125 g butter softened
  • 825 g canned pie apples
  • 1/2 cup desiccated coconut
  • 1 cup sour cream
  • 1 egg
  • 1/4 cup sugar
  • 1/2 tsp ground cinnamon

Method

  1. Combine cake mix, coconut & softened butter in a bowl.
  2. Using fingers, rub in the butter until it resembles breadcrumbs.
  3. Lightly press into the base of a greased 20 x 30 cm tin
  4. bake at 180C for 15 minutes
  5. Arrange fruit on cooked cake base.
  6. Mix together sugar and cinnamon and sprinkle over fruit
  7. Blend sour cream and egg and pour over fruit
  8. Bake for a further 20 minutes or until set

You can use other tinned fruit (drained) or frozen berries also work well.
